Following a recent expansion, the Japanese fine diner at the base of The Calile Hotel has grown from a 60-seat venue to a 100-seat establishment. The new space, designed by architects Richards and Spence, adds a striking bar, a small lounge, and footpath seating on Doggett Street. The design presents a study in contrasts. Guests first encounter a stark and steely environment of grey and white marble on the floors, bar, and tables, which some find cool in its modernism. 

Yet, deeper inside, the atmosphere shifts to what has been described as darkly seductive and intimate, centred around a stunning 9.3-metre sushi bar made of Hinoki timber. This allows diners to choose their experience, from watching chefs at the bar to seeking privacy in a curved booth or an exclusive mezzanine dining room.

Under the direction of Head Chef Shimpei Raikuni, the culinary approach focuses on purity, provenance, and precision with a menu built around fine seasonal Australian seafood. This philosophy caters to two very different budgets. On one hand, the restaurant serves a clientele that includes visiting celebrities, offering a premium omakase where the chef curates the meal, or à la carte selections where a single piece of Kagoshima sirloin nigiri costs $33. 

However, the restaurant also provides a more accessible path to its high-end offerings. A $65 lunch set special has become a popular choice, including a chef’s selection of sashimi and nigiri, a choice of wagyu steak or king salmon, a mixed leaf salad, and miso soup. This deal makes the lauded quality of the kitchen available without the top-tier price tag.

Regardless of the price paid, the quality of the food receives high praise. Reviewers have noted the exceptional freshness of the sashimi and the remarkable skill in dishes like the tamago, or Japanese omelet. The spicy tuna crispy rice is consistently highlighted as a signature dish that should not be missed. 

The praise is not without balance; some diners have found the sushi rice a bit loose, making it tricky to eat, while others noted the premium A5 wagyu could be overly rich for some tastes. For those enjoying a drink, a helpful piece of advice is to check the wine list carefully. The restaurant offers both 75ml and 150ml pours, and the listed price may be for the smaller glass, which could lead to a surprise on the final bill.

Hellenika Slashes Bills in a Big Way for Hospitality Staff

Hellenika, one of Brisbane’s most popular Greek restaurants, is offering a 50% discount on meals exclusively for hospitality workers. Located in the Calile Hotel, the restaurant, known for attracting celebrity diners, is shifting its focus this month to give back to the hardworking individuals in the hospitality industry.



The offer was announced by Hellenika’s owner, Simon Gloftis, who shared on Instagram his desire to support fellow industry workers during what is often a challenging time of year. 

For February 2025, hospitality staff can enjoy half-price dinners from Monday to Thursday, simply by presenting a verified pay slip and photo ID. To make the experience more inclusive, each hospitality worker can also bring one non-industry guest who will receive the same discount.

“Join us for dinner from 5:30 p.m., Monday through Thursday, and treat yourself to a well-deserved break,” the social media post stated.

“Just show us a recent and verified payslip as proof of hospitality industry employment along with an ID to receive the discount. Every industry guest is welcome to bring along a non-industry plus-one who will receive the same discount. 

“The discount will apply to tables of up to 10 guests, with at least 50% of the table required to provide proof of industry employment upon arrival.”

A Gesture of Appreciation

Mr Gloftis explained that the discount is his way of acknowledging the dedication and hard work of hospitality professionals, who spend their days serving others. He emphasised the importance of recognising their efforts, especially as the industry continues to recover from the challenges faced over the past few years.

While the offer is generous, Mr Gloftis has made it clear that verification is required to prevent misuse. Bookings are recommended to secure a table, although walk-ins will be accommodated where possible.

Fortitude Valley’s Popular Hellenika Zucchini Chips to be Patented

For nearly 10 years and counting, Hellenika, the Greek restaurant inside The Calile in Fortitude Valley, has been known for its addicting, crunchy and tasty zucchini chips. It’s been on the restaurant’s menu from the beginning and now restaurateur Simon Gloftis plans to patent how it’s made.



Mr Gloftis said that patenting the popular entrée or poolside snack, otherwise also called the Kolokithia, would prevent copycats from developing their version of the Hellenika zucchini chips. He wants to ensure that this product is solely identified with his restaurant because it will never be taken off the menu.

Every week, Hellenika serves thousands of orders of this thinly-sliced batter-fried goodness and the demand hasn’t slowed after the pandemic lockdown. 

“You can never have a bad day when Hellenika zucchini chips are involved, it’s a fact,” the restaurant’s Instagram page stated. “Sprinkled with kefalograviera, because cheese makes everything even better.⁠”



Mr Gloftis hasn’t detailed how he’ll acquire the food patent but he’s not the only one planning to patent a signature dish. Detour in Woolloongabba will also patent its recipe and cooking process for its famous Kentucky Fried Duck (KFD).
